Low-Carb Sausage Biscuit Balls

All of Reagan's doctors and specialists are about a 5 hour round trip away. Sometimes that means we go the night before and stay in a hotel for a morning appointment. Sometimes we wake up at 4am to make the trip. She never complains. So every now and then, on one of these early trips, we'll stop at McDonald's for a sausage biscuit. I know, I know, that's nowhere near clean eating, but it's not a regular thing, so I've already forgiven myself.

When we started the keto diet, I knew one of the things I'd need to replace was our fast food breakfast treats on our appointment days. So I was super excited to find this recipe for low-carb sausage biscuits! And as a bonus, they're delicious! Because what's the point of low-carb if it tastes like garbage? These are so good that you'll have trouble not eating the whole batch at once. Which is precisely why I made two batches instead of one!


Ingredients
1/2 cup almond flour
2 eggs
1 Tbsp butter, melted
8 oz sausage tube
1 cup shredded white cheddar cheese

Melt the butter in the microwave, then add eggs and blend. Add remaining ingredients and squish with your hand until evenly mixed.

I used an ice cream scoop to make even portions, then dropped each little round onto a cookie sheet lined with a silicone baking mat. It should make 12 biscuits. Place in your oven that has been preheated to 350 degrees and cook for about 20 minutes or until lightly browned.

There's absolutely no need to grease your cookie sheet. These will be swimming in grease when they're done cooking, so don't worry about them sticking. Let them cool for a few minutes, then transfer to a plate lined with paper towels to soak up some of the excess oil.

The finished sausage biscuit balls will have about 1 carb each if you make sure to choose a sausage that has 0 carbs (brands differ, with some having 2 carbs per 2 oz of sausage) and a cheese with <1 carb per serving. I've found that a lot of the white cheeses (like mozzarella) have a higher carb count. Cheddar cheese is usually a good choice, and I used white cheddar because my child refuses to eat orange cheese. Of course. But I'm not complaining, because she loved these and kept begging for more! Win!
